Antipasto

Marinated Mozzarella with
Sun Dried Tomatoes and Anchovies

Large Galic Clove Chopped
2/3 Cup Olive Oil
1/3 Cup Red Wine Vinegar
1 1/2 TBS Fresh Basil or 2 tsp Dried
1/2 lb. Fresh Mozzarella Cheese in Block or Cubes
1/2 lb. Arugula
Small Red Onion Cut in Rings
1/2 Cup Oil-Packed Sun Dried Tomatoes in Bite Size Pieces
2 oz. Tin of Anchovy Filets
Mix garlic, olive oil, vinegar and Basil. Add Mozzarella cheese, toss, cover and
refrigerate 20 minutes.
Plate Arugula, boarder with onion rings circle and alternate tomatoes and anchovies
evenly on circle.
Plate Mozzarella in center. Sprinkle rest of dressing from marinating bowl on salad.

Primo

Fusilli with No-Cook Tomato Sauce

1 1/2 Lb. Tomatoes, Chopped
1 Garlic Clove, Chopped
4 tsp Red Wine Vinegar
1/4 Cup Extra Virgin Olive Oil
1 Cup Shaved Parmesan Cheese
1 Cup Fresh Basil Leaves, Torn
1 Lb. Fusilli Spaghetti
Put tomatoes in a bowl. Mash. Add garlic, vinegar, olive oil and ½ of the cheese and
Basil.
Cook Spaghetti according to package. Drain.
Add sauce and top with rest of Parmesan cheese and Basil.

Secondo
Lamb Steaks

2 Lamb Steaks
2 Garlic Cloves, Chopped
2 tsp Rosemary
1/4 Cup Extra Virgin Olive Oil
Mix Garlic, Rosemary and Olive Oil, add Lamb steaks and marinate at least 2 hours.
Grill in Cast Iron Pan 5 minutes per side.
Remove from heat and rest before serving.

Contomi
Cauliflower in Wine

1 Cauliflower Head , Chopped
2 TBS Olive Oil
1/2 Cup Dry Red Wine
2 Garlic Cloves Chopped
1/4 Cup Pecorino Romano Cheese Grated
Heat oil in fry pan. Saute Cauliflower for 2 minutes
Add Garlic. Saute 1 minutes.
Add wine, cover and simmer 15 minutes.

Dolci

Italian Cream Cake

1 Box White Cake Mix
4 Eggs
1 1/2 Cups Heavy Cream
1/2 Stick Butter Melted
1 3 1/2 oz. Package Instant Vanilla Pudding Mix
1 Cup Chopped Pecans
2 Cups Flaked Coconut
Vanilla Frosting
Preheat oven to 350 degrees. Prepare 2 9-inch round cake pans.
In large bowl, add melted butter with cake mix. Mix together heavy cream and eggs.
Add cake mix. Add vanilla pudding mix and beat with mixer 1 – 2 minutes. Fold in
Pecans and Coconut.
Divide batter between the 2 pans and bake 30 minutes. Cool.
Frost and sprinkle with extra Pecans and Coconut.
