Tapioca Pudding with Condensed Milk and Coconut

First dessert of the year!!! This is the way I like it, very easy and quick to prepare and how good people are!!!

It’s worth remembering that this tapioca is NOT the “gummy” type that we put in the frying pan and fill, these are small balls that are very hard like a grain of wheat. It is found in most supermarkets in the part where they have cornmeal, flour, etc.

Start by bringing it to a boil (I use one of those mugs for this):

  • 400ml of milk;
  • 1/2 cup or 120ml of condensed milk;
  • 200ml coconut milk;
  • 3 tablespoons of sugar.

Bring to a boil and stir with a spoon to dissolve the sugar well.

In another container mix:

  • – 1 cup (240ml) of granulated tapioca;
  • – 50 grams of unsweetened grated coconut (best if it is fresh coconut, but it can be from a packet).

Pour the recently boiled milk mixture over these ingredients. Stir occasionally for about 10 minutes until it becomes a thick porridge. The tapioca absorbs the liquid and thickens. All of this is out of the fire ok?

Place in containers (yields about 6 pots) and refrigerate for 3 hours. When serving, drizzle with condensed milk and decorate with fresh coconut. Super smooth and delicious dessert! Love it too much!

Now, if you prefer to make it in a mold and then remove it, just add 1/3 cup more tapioca to this same recipe. I did it like this and added a passion fruit syrup, it was amazing! Take a look at the photo I posted on Instagram (enjoy and follow @Panelaterapia):
