Tapioca Cream with Vanilla

This dessert is perfect for colder days. Very smooth but with an incredible texture! And the best of all is that it’s very easy to do, check it out:
Soak 1/2 cup of granulated tapioca in 700 ml of milk and let it rest for 1 hour. Then add 1 bottle of coconut milk (200ml), 8 tablespoons of sugar and 1 vanilla pod, split in half.

Keep over medium heat until it boils, remove the vanilla bean and continue stirring constantly to release the starch and once it boils, lower the heat and continue stirring until the tapioca “pearls” are cooked (try the balls until you feel they are very soft). ).

Taste the sugar, if necessary add a little more and if you think the cream is too thick, add a little cold milk and mix well until it reaches the desired consistency, remembering that after freezing it hardens well. Refrigerate in individual containers.

Keep in the refrigerator for at least 2 hours. When serving, sprinkle sugar and burn with a blowtorch. Another option is to serve with a topping of your favorite jelly.
