Wow, I’m all working on tapioca these days! I saw Ana Maria making this bread and I was eager to try it. It worked and it was delicious!!! The text below is from the original recipe with small observations from me to make it easier. Those who want can also watch the video of the recipe given on the program here.

Ingredients:

  • 1 ½ cups of milk (360 ml)
  • ¼ cup (tea) of oil (60 ml)
  • salt to taste
  • ¾ cup (tea) granulated tapioca (150 g)
  • 1 ovo
  • ½ cup (tea) grated Parmesan cheese (50 g)
  • ½ cup (tea) sweet cassava starch (60 g)
  • 1 cup (tea) grated parmesan cheese (100 g)

Notes on ingredients:

* Parmesan appears twice in the recipe because it goes inside the dough and then the balls are also dipped in cheese before baking. But it will become clear later on.* Granulated tapioca is NOT the tapioca dough that is used to make the one in a frying pan, it is the granulated one, which looks like sago and is found in the market next to the flour.

Hands-on:

  1. Place a pan over medium heat with 1 ½ cups of milk, ¼ cup of oil and salt to taste and stir until it boils. Reserve.
  2. Mix ¾ cup (tea) of granulated tapioca and the boiling milk from the pan (made above) in a bowl and let it cool. Stir every 5 minutes with the whisk to help it thicken faster.
  3. After the mixture has cooled, which will turn into a kind of gum, add 1 egg, ½ cup (tea) of grated parmesan cheese and ½ cup (tea) of sweet cassava starch and mix well. With your hands, take small portions of dough, make balls and dip in 1 cup of grated Parmesan cheese (I didn’t dip in the cheese, I baked it straight).
  4. Place the balls on a baking tray greased with butter and place in a preheated medium oven at 180ºC for +/- 30 minutes or until golden. Remove from the oven and serve immediately.

Notes on preparation:

My dough was softer than Ana Maria’s. The tapioca didn’t turn into a very solid gum. Even so, I added the other ingredients and as the dough was soft, I added it to the pan in piles using two spoons. It was delicious!
I froze some. I placed it on a baking tray greased with oil and placed it in the freezer. After freezing, I stored them in bags. To make it, I put it in the oven from frozen and it was just like freshly made!
