This bread is seasoned and salty, great to accompany roasts, pâtés, to scrape off the pasta sauce left on the plate, or simply to dip in good olive oil. Not to mention that serving bread made by us is really cool!!!
Before I start, I want to clarify that I buy frozen spinach and it comes in cubes (some brands come in balls). I used 2 cubes in this recipe, which I just defrosted in the microwave and drained the water that released. This amount should be the equivalent of 1/3 of a bunch of fresh spinach, cooked and finely chopped.
Ingredients (the measuring cup for this recipe is 200ml):
- 120 ml of water at room temperature;
- 1 tablespoon of softened butter;
- 2 cubes of spinach (already defrosted);
- 1 teaspoon of crushed garlic;
- 2 tablespoons of dried herbs of your choice;
- 1 teaspoon of salt;
- 1 teaspoon of sugar;
- 2 and 1/2 cups of wheat flour;
- 1 level tablespoon of granulated dry yeast (suitable for breads).
Just mix all the ingredients and gradually add the flour. This dough is really soft and sticky (you shouldn’t leave it at the point where it comes away from your hands), so you can’t knead it, just mix it and put it in a pan greased with a little oil.
Let it rise until it doubles in volume. A tip for dough to rise well is to place it in a bowl, cover it with plastic wrap or a clean tea towel and place it in the oven or microwave (turned off). The growing time will depend on how warm the environment is in your home, but in general it takes 40 to 1:15 hours.
Bake at 180º (no need to preheat the oven). The oven time will vary enormously depending on the brand of appliance, so after 30 minutes you can open the oven to see how your bread is doing (before then it will go stale). This recipe yields 1 medium loaf.
