Simple Lemon Cake

The original recipe is from the Culinária-Receitas community (from the old orkut) and was posted by Marilza with the name “Bolo Simples Fofíssimo” (totally appropriate). I modified it to turn it into a lemon cake. It really is a great recipe and it works! The original recipe looked like this:

Ingredients:
03 eggs
1/2 American cup of oil
1/2 American glass of water
1 1/2 US cup of sugar
2 tablespoons of vinegar
02 American cups of wheat flour
01 spoon of baking powder

Preparation: Blend all the ingredients in a blender and bake in a greased and floured pan.* On my own, I increased the amount of sugar to 2 cups because I used demerara and it is less sweet. I also added the zest of the peel of 1 large lemon, 1 dessert spoon of vanilla essence and used lemon-flavored vinegar.

For the topping, nothing more than a can of condensed milk mixed with the juice of 2 large lemons and spread over the cake (after it has cooled). Sorry I didn’t take a photo of the step-by-step process because the machine’s battery ran out, but it’s also so easy to do that you don’t even need it, right?
This cake is incredible! At the same time as it is dense, it is super fluffy! Not to mention that it grows absurdly! I loved!
