Sicilian Lemon and Poppy Pads

Sweet cakes and pies

That is great! With a warm cup of tea, it’s the perfect measure for chilly afternoons.

For you to understand, I would say it’s something between a cake and a cookie. On the bottom there is a crunchy crust and the top is very fluffy!

Ingredients:
1 cup of wheat flour
1 pinch of salt
1/4 teaspoon baking powder
70g unsalted butter at room temperature
1/2 cup sugar
1 ovo
1/2 teaspoon vanilla extract
1 teaspoon of poppy seeds (I used a little more)
zest of the peel of 1 lemon

Mix the sugar and lemon zest and let it rest for 15 minutes to taste. Add the vanilla and lightly beaten egg. Mix well. Add the butter which should be at “ointment point”. Then sift the flour, salt and yeast over the other ingredients. Add the poppy seed.

Make balls “dripping” on the baking sheet with the help of two spoons of coffee. Don’t forget to leave plenty of space between them.

Place in a preheated oven at 180º for approximately 15 minutes. Remove the pillows from the pan and place on a cold surface. Yields around 22 units.
