Sequilho with Guava

Sweet cakes and pies

This cookie is delicious! One of those dangerous ones that we eat over and over and that melt in our mouth, you know?
An important tip is to make it with guava paste, the harder one, so that it doesn’t melt too much and flow in the oven.
On top of that, the recipe is cheap and makes an absurd amount of money (about 4 large baking trays). Very easy to make, let’s write down the ingredients?

Start by mixing:
1 egg (white and yolk);
1 tablespoon of sugar;
Half a can (or box) of condensed milk;
100g softened unsalted butter (not melted);
4 tablespoons of cornstarch (Maizena).

When it is well mixed, add wheat flour little by little until smooth (about 300g or 1/3 of the package).

Mix until you get a smooth dough that doesn’t stick to your hands.

Make balls and place them on a baking tray. Flatten them with your fingertip and place a small piece of guava paste in the center of each one. I used guava paste which is much firmer, if you use regular guava the piece has to be very small because it melts a lot.

I lined the pan with baking paper, but it’s not necessary, you can place it directly on the pan without greasing. Bake in a preheated oven at 200º until the underside is golden. As each oven is different, leave it for about 10 minutes. Then you can open it and check if the bottom of the biscuit is golden, if not, leave it for another 5 minutes and check until you think it’s ok.

Remove the cookies from the baking tray and let them cool, only after they are cool will they become dry. Store in a closed container
