I usually make this potato with the skin on, but it was fine.”little bruise” and I thought it would be better to remove it (I used the one with the pink shell called asterix). If you are in a hurry, cook the potatoes in boiling water for 6 minutes. I made it raw, straight from the oven.

I line a baking tray with aluminum foil and drizzle with plenty of olive oil. Then I add a handful of fresh herbs (I used rosemary, basil and lemon thyme), add the already cut potatoes and mix well to coat them in the olive oil with herbs. I sprinkle freshly ground pepper (always) and fleur de sel. I cover it with aluminum foil and put it in the oven. Every now and then I turn the potatoes over to make sure they color evenly. When they are cooked, I remove the aluminum foil from the top to brown them.
