Roasted Thigh with Olive Oil, Lemon and Thyme

Roast chicken can be made in many ways, but this is one of my favorites. Not only for the taste, but also for the ease. In very little time (apart from the oven time, of course), you can prepare a beautiful, delicious and aromatic dish! I also make this same recipe swapping the lemon for orange and it’s amazing!

Ingredients:
– 4 chicken thighs
– Juice and zest of 1 lemon
– 4 to 8 sprigs of thyme
– 4 tablespoons of olive oil
– 1 clove of minced garlic
– Salt and black pepper as much as necessary.

Season the chicken thighs with lemon juice, chopped garlic, half the zest, salt and black pepper. Place on a baking tray and drizzle with olive oil. Spread thyme sprigs and bake in a preheated oven at 200ºC until golden.

When serving, remove the dried thyme sprigs, drizzle with a drizzle of olive oil, scatter over the remaining lemon zest and fresh thyme leaves.
