I think it’s one of the easiest meats to prepare in the oven, because it’s very difficult for it to go bad! The secret to not drying out is to buy a piece with a layer of fat that will melt when roasted, thus keeping the meat moist.

This piece was around 800g and I cut it in half to fit in the pan. As the ribs have a lot of bones, I think the ideal amount is around 350g per person.

Seasoning the meat is very important. I seasoned it the day before with two measures of this seasoning –> here.

I lined a baking tray with aluminum and baking paper just to avoid making a mess, but it’s not necessary, if you want, you can use a baking dish or refractory just greased with a little oil.

Cover with aluminum foil and bake in a preheated oven at 200º for about 40 minutes, or until it looks like this:

Remove the aluminum foil, add boiled potatoes (not too soft, so they don’t fall apart) and return to the oven to brown for about 30 minutes. Keep an eye out, as each oven is different. In the end, it should look like this:

You can serve it in large pieces or cut it between bones. Ugh, ribs are pure love in the form of meat, right, friends?
