I made this incredible maminha as a guest Chef Carrefour thinking about Mother’s Day lunch. It’s a super simple recipe and ends up being economical because it serves a lot of people. You can make it with other cuts of meat, such as skirt steak, for example, but it’s important to choose a nice piece with fat embedded in it so that it remains tender.
Ingredients:
100g unsalted butter;
4 cloves of garlic;
1/2 cup. (tea) of chopped herbs: thyme, oregano, green chilli, basil (the herbs you prefer);
Salt and black pepper to taste;
1 piece of breast weighing approximately 1,300 kg
Small potatoes and chives.
Way of doing:
First prepare the herb butter. Mix the softened butter (to the point of ointment) with the garlic and herbs.
Season the meat with salt and pepper on both sides. Spread the herb butter on both sides as well. Place the meat in the roasting pan and place the potatoes and onions (raw) around it. Also spread some butter over them. Place in a preheated oven at 200ºC for approximately 1 hour and 30 minutes.
Every 15 minutes, open the oven and baste the meat with the butter that remains melted in the pan.
