Oh man, how delicious this rib is! And the wonderful smell that lingers in the kitchen, huh?
In fact, it is made half under pressure and half in the oven. Super simple to do, follow along:
In a pressure cooker, sauté 1 onion and 3 chopped garlic cloves in oil or olive oil (I like it with a lot of garlic, but if you prefer, use less).
Add 1 kg of beef ribs in pieces and mix just to color a little. Add 1 envelope of powdered meat broth (or 1 crumbled tablet) and 1 teaspoon of salt. Mix well and add 100 ml of water (I always like to use very hot water).
Cover the pan and as soon as it reaches pressure, lower the heat and leave for 20 minutes (this time may vary depending on your stove, if you smell burning meat, turn it off first).
After this time, turn off the heat and let the pressure release naturally. If you think the meat is still hard, return to pressure for another 10 minutes.
You can end the process here, the meat comes out wonderfully under pressure, but I like to roast it a little to make it drier. If you want to do it this way, remove the pieces of meat and place them in an ovenproof dish. I discard the water and oil left in the pressure cooker.
Add some potatoes (I steamed the potatoes for 6 minutes) and place in the preheated oven at 200º for another 15 minutes, just to make them drier. Wow, this rib is delicious meat!!!
