Roast Lamb with Potatoes

These days I went to visit my parents in Presidente Prudente and every time I come back with some goodies from my mother. This time I brought a kilo of ram seasoning left over from the barbecue and I made roast with potatoes.

O seasoning The one my mom made was delicious! For 1 kilo of lamb you will blend:

  • 1 onion;
  • 2 garlic cloves;
  • 1 cup of mint leaves;
  • 1 large sprig of rosemary (only the leaves);
  • 1/2 cup of green scent;
  • Salt and black pepper to taste;
  • 1 glass of dry white wine;
  • A little water if necessary to leave the seasoning thinner.

Blend everything, pour it over the meat and store it in the fridge overnight to let the flavor develop.


When baking, I covered it with aluminum foil and put it in the oven at 220ºC for 1 hour. Then I removed the paper, transferred the lamb to another dish, added some cooked potatoes and returned to the oven for another 45 minutes. The liquid that the meat released was left on the plate where the lamb was previously. I reserved this liquid and every 10 minutes I watered the meat with it to prevent it from drying out and maintain the flavor.

Even I’m not in love with ram I liked!
