
Risotto is something you eat straight away, the next day it turns into a brick. But when you have leftovers, don’t waste it, because the risotto cake is sooo good!

You can give it a little extra seasoning, add a little parmesan, crushed garlic, herbs, whatever your imagination tells you, then just grease your hands well with olive oil, make balls, dip in beaten egg, breadcrumbs and fry. .
You get that very dry crust with a very creamy interior, manja? Craziness!!!
As my risotto was made with zucchini and sausage, I discarded the pieces of vegetable and used a slice of sausage in each ball, but it could have been cubes of cheese.

So you know, no sending the “brick” of risotto to the trash the next day, okay?
