Another one of mine homemade pasta. This is super light and no less delicious for that!

The ingredients I used in the filling to make enough for 2 people are:
4 spinach balls (the chopped spinach I buy comes frozen in ball format);
200g ricotta;
4 tablespoons of chopped onion;
1 clove of chopped garlic;
1 tablespoon of cream cheese (I used Light);
Salt, pepper and fine herbs.

I can’t describe how light this dough is! Although it was delicious, next time I will roll it out a little thicker. I rolled out the dough in the cylinder to the thinnest possible thickness and the rondelli didn’t have a very round shape, but it was very light! Approved!
