I looooove this rice! Guys, it’s so easy to make and the results are so good that it’s one of those recipes that you can adopt for life! He knows?

I used pre-cooked shrimp, because for this recipe you don’t need to use huge shrimp as they will cook right along with the rice. I think the pre-cooked one is more tender in this recipe than the fresh one, but you can also use it if you prefer.

Ingredients:

  • 2 tablespoons of olive oil;
  • 1 chopped onion;
  • 2 cloves of chopped garlic;
  • 1/3 chopped yellow pepper;
  • 1 can of peeled tomatoes;
  • Drops of pepper sauce (to taste);
  • 1/3 cup (tea) of fresh peas;
  • 200g pre-cooked shrimp without shell (you can also use raw shrimp);
  • 2 teaspoons of salt
  • 1 teaspoon of saffron (turmeric);
  • 1 teaspoon of spicy paprika;
  • 1 cup of needle rice;
  • 2 cups (tea) of boiling water.

Sauté the onion in olive oil, then add the garlic and pepper and let it sauté (about 2 minutes over low heat). Add the peeled tomato. As it cooks, with your own spoon you will “break” the tomato into smaller pieces. If you want, add drops of pepper sauce at this point. Add the peas and shrimp.

Cover the pan and let it boil for 1 minute.

Season with salt, saffron and paprika. Add the rice, mix well, add the boiling water and cover. Keep it on low heat until the water dries and it’s ready. Just sprinkle parsley and serve. I like to drizzle the dish with olive oil. It looks wonderful!
