Rice with pepperoni and vegetables

This is the type of food that is on the everyday table here at home. Super practical because it is a unique dish. I just make a salad to go with it and the rango is ready.

For those who don’t like sausage, you can use chicken, beef, or even mushrooms instead (for a vegetarian version). It’s quite simple:

Sauté 1/2 onion, 2 chopped garlic cloves and 1 cup of chopped pepperoni. When the sausage is golden, add 1/2 cup of diced yellow pepper, 1 chopped seedless tomato and 1 cup of chopped zucchini (I discard the middle part as it is too soft). Add 1 envelope of powdered vegetable broth and mix. Add 1 cup of raw rice and sauté some more. Cover with boiling water until the rice is just above the rice level and let it cook with the pan half covered.

In this case I don’t use salt because the pepperoni and broth powder are enough, but if you make it with chicken or mushrooms it might be necessary.

To shape the rice, just apply a little olive oil or oil in a small pot and press the rice well inside it. Then just turn it over on the plate.
