Rice with Cod and Chickpeas

I made this post in real time, after all, this Rice with Cod is my mother’s recipe and will be on our Easter table soon. Great option to make with leftover cod as it makes a lot and is delicious! Oh, you can replace the cod with shredded chicken, soy protein or tuna, but do it with cod, okay?

Rice with Cod Ingredients

  • 1 cup (tea) of already desalted cod chips, but don’t worry, I’ll teach you that below;
  • 1 chopped onion;
  • 1 tablespoon of crushed garlic (or 3 chopped cloves);
  • 2 chopped tomatoes;
  • 2 tablespoons of chopped green pepper;
  • 2 tablespoons of chopped red pepper;
  • 2 tablespoons of chopped yellow pepper;
  • Chopped black olives to taste;
  • 1/2 cup (tea) of fresh peas (can be frozen);
  • 200g cooked chickpeas (about 1 cup);
  • 4 cups (tea) of ready-made rice;
  • Green scent to decorate (at the end);
  • 1/2 cup (tea) grated parmesan (optional).

Sauté the onion, garlic and peppers in olive oil, then add the cod, chickpeas, peas, olives and tomatoes (the tomatoes go at the end so they don’t break down too much).

Add 1/2 cup (tea) of water and cover the pan, be patient and let it cook a little over low heat, but be careful to add salt (if necessary).

Reserve 1/2 cup (tea) of the stew, add 4 cups of ready-made rice to the rest of the stew and mix.

Place it on a platter, spread the reserved stew on top (that 1/2 cup) and finally the green scent.

You can serve it as is, if it’s already beautiful, but if you prefer, cover it with parmesan and put it in the oven to brown and it’ll also look spectacular!
