This rice is a great option to change up your everyday white rice. It’s great to accompany grilled dishes. The ginger flavor is quite mild, but if you don’t like it, just don’t use it and follow the recipe normally.
Start by sautéing 1 tablespoon of crushed or chopped garlic in 3 tablespoons of olive oil. Add 1 grated carrot and 1 teaspoon of grated ginger (I buy it in paste form). Add 150g of rice (I use 2 measures from the measuring cup which holds 75g), this:
Saute the rice with the other ingredients for a few minutes. Add 1/2 tablespoon of salt. Cover with boiling water until 1 inch above the level of the rice. Cook over low heat, in a covered pan, leaving a little space for the steam to escape until the water touches the rice.
Now cover completely and leave a few more minutes to finish cooking. Turn off the heat and let it rest for 5 minutes (this time is important so the rice finishes “drying” so it doesn’t stick together). Stir the rice with the help of a fork and sprinkle with chopped parsley.
Makes 4 well-served portions!
