
I always have this type of rice at home, it’s actually a mix of cereals, grains and brown rice. I do it at least once a week. I buy the Ráris or Tio João brands (used in this recipe).
The problem is that this rice is expensive and there’s always a surplus, so I’m always inventing something with it. I’ve already made farofa, salad and now an omelet! And wasn’t it delicious? It was my lazy holiday dinner.

I beat 4 eggs, seasoned with pepper and salt and added 2 tablespoons of grated parmesan. I greased the frying pan with olive oil and over low heat added the beaten eggs. I kept the pan covered to cook the eggs more quickly. When they were almost cooked, I added a few spoons of the finished rice, spreading it over the top. I waited for it to cook completely, folded it in half (like a crepe) and that was it. Enough for two people and worth dinner! Good option for those who don’t eat meat!
