Another delicious recipe that I made for the Chef Carrefour project. As I love potato bread, I chose to make this version with a filling of three cheeses (parmesan, mozzarella and cream cheese) and it was so good, so good that if I were you I would do it too!!! In any case, the filling can be whatever you want, or even no filling at all, because the bread is good either way!

Ingredients:
– 80ml of warm milk;
– 40g of softened butter;
– 2 excited;
– 1 cup of boiled and mashed potatoes;
– 1 tablespoon of sugar;
– 1/2 tablespoon of salt;
– 1/2 tablespoon of dry organic yeast;
– 1/2 kg of wheat flour (approximately).
Filling:
– 150g of mozzarella;
– 1 tablespoon of cream cheese;
– 3 tablespoons of grated parmesan.
Mix the milk, butter, eggs and potatoes. Add the dry ingredients and mix. Knead a little until you form a smooth dough, you may need more or less flour. Cover and let rest for 1 hour.
Mix the filling ingredients. You can grate the cheese and add the cream cheese or put everything in the processor.
Take pieces of dough, open them, add the filling and close. Place the balls on the baking tray and let them rise for another 30 minutes. Brush an egg yolk and bake in a preheated oven at 180ºC for approximately 25 minutes.
Yields 20 loaves.
