Do you know when you lack inspiration for a different side dish? So colleague, make this recipe and there’s no mistake! Very simple to make and delicious! It goes well with red or white meat and is always a hit! Because potatoes and corn can’t go wrong!

Ingredients (for 4 servings):

  • 1 tablespoon of butter;
  • 1 tablespoon of olive oil;
  • 1/2 chopped onion;
  • 1 clove of chopped garlic;
  • 1/3 cube of vegetable stock;
  • 2 medium potatoes chopped into small cubes;
  • 1 can of green corn (without the water);
  • 1 small box of 200g of cream;
  • 2 tablespoons of chopped green chilli powder);
  • Parmesan cheese to taste.
  • 1 teaspoon of salt.
  • Black pepper, nutmeg and any spices you like.

Cook the potatoes, already chopped into cubes, in boiling water until they are soft (but not too soft). Drain. Sauté the onion and garlic in butter and olive oil. Add the potato, corn and green chillies. Add the vegetable broth and a little water (2 tablespoons) to dissolve it. Mix well. Add the cream and a tablespoon of grated parmesan. Adjust the salt if necessary and add any seasonings you like (I use white pepper and nutmeg). Sprinkle more parmesan on top and place in the oven to brown.

Tip: This recipe can be made with whatever vegetables and combinations you prefer.
