You can make pork ribs in many different ways, but this one is very practical, quick and looks wonderful! Usually in the oven, if you don’t have much practice it can be dry, this one is juicy! The onion caramelizes under pressure and gives a sensational color and flavor.
Start by seasoning 1 kilo of cut ribs at least 2 hours in advance. For the seasoning (marinade) mix:
– 2 tablespoons of soy sauce;
– 2 tablespoons olive oil;
– 1 tablespoon of coloring or paprika (or paprika);
– 1 teaspoon of salt;
– 1 tablespoon of mustard;
– 1 teaspoon of crushed garlic;
– Black pepper to taste;
– 2 tablespoons of water.
I put the ribs in a plastic bag, throw the seasoning inside and leave them in the fridge.
When ready to prepare, I slice 2 large onions and line the bottom of the pressure cooker. On top of the onions I place the ribs, cover the pan and turn on the heat. No need to add water or sauté. The onion and ribs will release a lot of water. As soon as it reaches pressure, lower the heat, count 15 minutes and turn it off. Let the pressure release normally.
When you open the pan, the ribs will be cooked but without much color. Now comes the important part. Boil 500ml of water (you won’t use it all). Place the pan on low heat, uncovered and gradually add water and sauté the ribs. When the water dries, add some more.
The water releases the “sludge” from the onion and meat that is at the bottom of the pan and gives it a delicious color and flavor. When the color is beautiful, try a piece, if it is soft and well cooked it is ready. It has an incredible flavor!
