You can always spice up everyday food and make it look “different”. I had a piece of pork filet mignon cut into escalopes and I wanted to change the traditional grilled style, so this recipe came out.
I seasoned the escalopes 2 hours in advance with –> to be seasoning.
I chopped a large seedless tomato and seasoned it with salt, pepper, olive oil and oregano. I booked.
I heated the frying pan with a drizzle of olive oil and grilled the escalopes. Here’s a tip that I always use on all grilled foods (be it beef, poultry, etc.). After grilling on both sides, I take the container where the meat was seasoned with the rest of the marinade and add a little water. I’m dripping this seasoned water over the escalopes in the pan, little by little. This adds flavor and helps with cooking.

I placed the tomato cubes on the escalopes, sprinkled basil leaves, covered them with grated cheese and put them in the oven. As I used the iron skillet, it went straight to the oven, but you can transfer the escalopes to an ovenproof dish. I left it in the oven just long enough to melt the cheese and heat the tomatoes.
* I used semi-cured Minas cheese because that’s what I had at home, but it can be whatever you prefer.
