Pineapple Dessert with Raspberry Syrup

In my frantic search for light and tasty recipes (which is kind of difficult) I discovered this one! I actually combined some ingredients I had at home and it worked really well!
So… it’s not one of those desserts that women love, with lots of chocolate, creams, etc., but it’s light and works well!

I used:
100 ml concentrated pineapple juice
1 light (diet) pineapple gelatin
100 grams of ricotta (about 1/3 of a small one).
4 tablespoons of light cream
3 tablespoon powdered sweetener
2 spoons of lemon juice

I dissolved the gelatin in 200ml of boiling water, not 250ml, as stated on the packaging. Instead of adding another 250ml of cold water, I mixed the 100ml of pineapple juice with another 100ml of water. I added the cream, sweetener, ricotta and lemon juice. I beat everything with the mixer and put it in my sweet molds (yields 4). I put it in the fridge until it hardened well (overnight).
*To unmold, just wet the molds before adding the mixture (it still didn’t come out perfect).

For the syrup, I had a French “St. Dalfour Framboises” which I put on the fire with a little water. If you want to do the same with diet jelly of any flavor, it works.
