You’ve already noticed that even without my mom at home (she’s arriving today hey!) I’ve been cooking very little here. I just make something or other for lunch. That’s because the one who really takes over the kitchen for over 20 years is Lú, an accomplished cook! And since I love her cooking, I gave myself a break from the stove, but it’s only until next week. So in order to just make some snacks, I made a bread stuffed with my adored-idolized-hail-hail dough for baked snacks (recipe HERE).

For the filling:Mix (everything finely chopped):
1 piece of Calabrian sausage;
1/2 onion;
1 seedless tomato;
3 tablespoons of green scent;
1 tablespoon of oregano;
1 tablespoon of vinegar (any);
1 pinch of black pepper. I didn’t add salt because the pepperoni is already salty, but if you want, feel free.

To assemble, I divided the dough into 3 parts, rolled each one out, cut a rectangle and filled it, making a base with grated mozzarella and then seasoned pepperoni. I closed it like an envelope and brushed it with a mixture of 1 egg yolk and 1 tablespoon of water. Preheated oven: 200º until the surface is golden.
