My mother has a saint who has worked in her house for about 20 years, Luzia, our LÚ, is part of the family and makes wonderful food (everything she learned from my mother). She makes this sweet treat like this: she cuts papaya (preferably still green) and soaks it in a liter of water with a spoonful of quicklime. Then wash it well to remove the lime and boil it until soft with just water (the secret is to not make it too sweet). When the papaya is almost done, add sugar and cloves until it turns into syrup. I know the recipe isn’t very detailed, but Lú doesn’t talk much and it was difficult for her to explain ….
