I always make panceta (pork belly), if you search here on the blog you will find some recipes, but when I saw Léo Young (the one who won the last edition) preparing a recipe very similar to this one I was dying to try it. He used miso, which I imagine gave it a wonderful flavor, but I made it with what I had at home at the time and it was perfect.

The difference with this recipe is to pressure cook the pancetta, in a very tasty broth before grilling.
So to start you need to make a stir-fry. In the pressure cooker add in the following order:
– 3 tablespoons of olive oil;
– 1 small chopped onion;
– 1 chopped carrot;
– 1 stalk of chopped leek;

Saute everything until it starts to brown and continue adding the other ingredients below:

– 1 branch of thyme (you can use any herbs you want);
– 1 teaspoon of salt;
– black pepper to taste;
– 500g pancetta and pieces.

Cover with hot water and cook over medium heat until pressure is reached, then lower heat to minimum and set for 35 minutes. Turn off the heat and let the pressure release normally.
Remove the pancetta from the broth, dry well with paper towel and grill on all sides in a non-stick frying pan. You don’t need to add any fat, it releases the fat itself. It melts in your mouth!

I strained the pancetta broth that was left in the pressure cooker and made a risotto. It was wonderful!
