I could say it’s like Habib’s esfiha, but I can’t be unfair, this one is much tastier hahahaha. This dough is delicious and you can make it with whatever fillings you want, including sweet versions! Let your imagination go and play!

Dough ingredients:
10g of dry organic yeast;
1 tablespoon of salt;
2 tablespoons of sugar;
2 cups (tea) of warm milk;
3 tablespoons of butter;
2/3 cup (tea) of oil;
5 cups (tea) of wheat flour (approximately);
Flour for sprinkling.

Filling:
500g of ground meat;
3 chopped seedless tomatoes;
2 chopped onions;
Juice of 2 lemons;
1 teaspoon of salt;
1 teaspoon of Syrian pepper.

For the filling, mix the ground beef, tomato, onion and lemon juice and let it drain in a colander or colander for 30 minutes.

Meanwhile, mix the yeast, salt, sugar, warm milk, butter and oil. Add the flour, little by little, mixing with your hands until it forms a soft dough that doesn’t stick to your fingers. Knead for 5 minutes and add more flour if necessary. Form a ball, cover and let rest for 20 minutes.

Meanwhile, squeeze the filling to release the liquid. Transfer to a bowl, add salt and pepper and mix well. Reserve.

Roll out the dough into a cylindrical shape on a floured surface and cut into small pieces. Form into balls, cover and let rest for another 10 minutes.

Make a dimple in the center of each dough and place a portion of the filling in the middle, leaving the edges higher. Place in a pan sprinkled with flour and bake in a preheated medium oven for 20 minutes or until the edges are lightly browned. Remove and serve immediately.

Yields 20 units.
