Store-bought granola bars may taste good, but they’re usually loaded with added sugars and other questionable ingredients. This chewy granola bar recipe is sweetened with all-natural dates. Dates are high in fiber, are PREbiotics (meaning they feed the good bacteria in your gut), and contain important vitamins and minerals.
Fun fact about dates! They’re one of the oldest cultivated crops, “dating” back around 6,000 years! Dates are also one of only six tree fruits mentioned in the bible (along with grapes, figs, olives, pomegranates, and apples).
Another fruit with a long history is goji berries. Did you know that goji berries have been used to treat liver disease in traditional Chinese medicine! If you can’t find goji berries to use in this recipe, you can always substitute with another dried fruit such as blueberries or cranberries (look for ones with no sugar added).
Yet another delicious and good-for-you ingredient in this chocolate granola bar recipe is… (you guessed it) CHOCOLATE! This recipe calls for raw cacao powder, which is one of the healthiest forms of chocolate for your body. This tasty granola bar recipe is vegan and uses coconut oil instead of any animal products such as butter to help all the ingredients stick together. Coconut oil provides a boost of healthy fat that can energize and satiate as well. It is also a strong antiviral, anti-inflammatory, and antibacterial food.
If you really love coconut, one easy adaptation for this recipe is to turn the bars into “coconut energy balls” by rolling the mixture into bite-size balls and rolling them in shredded coconut instead of pressing into a pan.
Or if coconut isn’t your thing, you can omit it and just have plain homemade energy balls. Especially with a granola bar recipe that’s no bake, you can play around with the ingredients to get the bars (or balls) just the way you like them.
