I’m into savory muffins. This one was really tasty, but I still haven’t got the flavor and texture I’m looking for. But it was worth it anyway:



Dough Ingredients:
1 cup (tea) of wheat flour
1 teaspoon of baking powder
1 teaspoon of salt
1 teaspoon of bicarbonate
3 teaspoons oil (I used canola)
1/3 cup of milk
1 ovo

Filling ingredients:
1/2 slice of chopped pepperoni
1 small seedless tomato, chopped
1/4 chopped onion
3 tablespoons chopped green olives
1/2 cup chopped mozzarella
1 teaspoon of oregano

Preheat the oven to 200º. Place the chopped pepperoni on 2 sheets of paper towel and microwave for 1 minute at full power, wait until it cools down.

Mix all the filling ingredients, add the egg (lightly beaten), oil and milk. Add the rest of the dough ingredients. It will result in a consistent and slightly lumpy dough (this is normal). Notice in the photo to the side that the Muffins were still raw.

Place in molds, sprinkle with parmesan and bake until golden. This recipe makes 8 muffins.

Tip: Wait for it to cool before removing it from the paper molds.
