Sweet cakes and pies

I made a post once about the fact that this cake, which is an icon of the 80s, have disappeared from the map. At the time it was called “pie” but in fact it is a cake and 90% of the birthdays at the time (even in my hometown Pres. Prudente) there was the famous Merged pie! Beautiful! With that real cake face, you know?

I was afraid of making it and realizing that the memory was better than the taste itself, but luckily that didn’t happen. A Merged pie It’s still the best party cake ever!

For me, who is super lazy with long recipes, I confess that it only takes a very strong desire to make me face a cake with filling and icing, but in this case it was totally worth it! Not just for the taste, but for the childhood memories that the mixed pie brought to me.

My considerations and small changes:

– After the annual cleaning I did at home, I donated several baking trays because they were already too old and it was only when I went to make the pie that I realized that I didn’t have a large round pan, so I only made half the recipe (that’s why my pie was shorter).

– On the white covering. She’s nothing more than a marshmallow. I do it a little differently than the website. For this recipe, I beat two egg whites to firm peaks (I set them aside). I mixed 2 parts sugar to 1 part water (in this case I used 1 cup of sugar and 1/2 cup of water) and stirred until it dissolved. I put it on medium heat and let it boil without stirring until it reached the wire point, which is when the boiling bubbles burst more slowly. I turned the mixer back on with the egg whites and carefully poured in the hot syrup while beating. The ideal is to beat until the egg whites cool down well. I put the marshmallow in the fridge until it was cold, and only then covered the cake. Remembering that if you are going to make the entire recipe as it is on the website I recommended, you will need to double my marshmallow recipe.

– For the brown icing I used 2 tablespoons of sugar, 2 tablespoons of chocolate powder, 1 tablespoon of unsalted butter and 2 tablespoons of milk. I put it on the fire to thicken a little and set it aside.

– To fill the cake, the dough and filling must be cold (refrigerate if necessary).

– After filling, I covered the entire cake with the white marshmallow and then “smeared” the back of a spoon with the brown frosting and spread it in circular movements over the marshmallow.

This is still and always my favorite pie/cake of my entire life!
