Mini Onion Quiche

Guys, no photo could truly express how WONDERFUL this tart is! Imagine something that melts in your mouth (no obscene thoughts please! he he)!

I know there are people who will turn up their noses at the fact that it’s made from onion, but believe me, the flavor is super mild and it’s sweet.

The recipe is from Ana Maria Braga. The only changes I made were replacing the fresh cream with ricotta cream, replacing the parsley with chives and using much less olive oil and butter to sauté the onion. Below I copied the text of the original recipe to make it easier “process“, ok?

Before going into the oven:

Ingredients:

– 220 g of wheat flour

– 100 g of butter
– 2 sifted egg yolks
– salt to taste
– 100 g of butter
– 1 cup (tea) of olive oil
– 3 large onions cut into thin slices
– 2 lightly beaten eggs
– 300 ml of fresh cream
– 100 g bacon, cut into cubes and fried
– 50 g of grated parmesan cheese
– 1/2 tablespoon finely chopped fresh sage
– 1/2 tablespoon of finely chopped parsley
– Salt and black pepper to taste

Preparation Mode:

1- In a bowl, place 220 g of wheat flour, 100 g of butter, 2 sifted egg yolks and salt to taste and mix well with your fingertips until it forms crumbs. With the dough, line the bottom and sides of a springform pan (21 cm in diameter), pierce it with the tip of a fork and set aside.

2- In a frying pan over medium heat, melt 100 g of butter and 1 cup (tea) of olive oil and add 3 large onions, cut into thin slices, leave in the pan, stirring occasionally, until a light brown color (+/- 10 minutes). Drain the onion in a sieve, pressing well to remove all the fat and leave it dry. Dry on paper towel. Reserve.

3 – In a bowl place 2 lightly beaten eggs, 300 ml of fresh cream, 100 g of bacon cut into small cubes and fried, 50 g of grated parmesan cheese, 1/2 tablespoon of finely chopped fresh sage, 1/2 spoon (soup) of finely chopped parsley, salt and black pepper to taste. Transfer this cream to the mold (reserved above) and spread the reserved fried onion. Place in a preheated medium oven at 180 degrees for +/- 30 minutes.

* If you make it in mini-tart pans like I did, it makes 8 units.
