Mini Banana Muffins with Walnuts and Raisins

Another light! No sugar! I’m on this “petit” finger food trend, it’s not just because it’s trendy, friends, it’s because anyone who wants to lose weight has to eat really small portions… oh defeat!!! But hey, as I say and believe: it is possible to lose weight by eating well!

I took a banana cake recipe that wasn’t light, adapted it and there it is. If you want to make it with sugar, check it out, it’s the same measure as the sweetener. It is very soft and leaves a delicious scent throughout the house (I made half the recipe, because otherwise I would have had to deal with the difficult task of eating 12 cupcakes, as my husband hates nuts)!!!

Ingredients (for 12 dumplings):
2 ripe dwarf bananas;
4 level tablespoons of oven and stove sweetener;
2 whole eggs;
1 ½ cup (tea) of wheat flour;
1 pinch of salt;
1 teaspoon of cinnamon;
½ cup (tea) of oil;
1 tablespoon of baking powder;
5 chopped walnuts;
3 tablespoons of raisins.

Blend the bananas, eggs, sweetener, salt and oil in a blender. In a separate container, sift the flour and yeast. Add the blended ingredients to the blender, add the nuts and raisins and mix well. Grease 12 pie pans with margarine and sprinkle with flour. Fill the molds until there is 1 finger left to complete. Sprinkle sweetener with cinnamon over the dough and bake.
It bakes quickly – keep an eye on it because I didn’t time how long it took.

Variations: in place of raisins and nuts, or in addition to them, you can use apricots, plums, cherries, candied fruits, any other nuts… you can even replace the banana with apple.

Oh, I almost forgot: 120 calories per cupcake (I already sent 2 inside)!
