Wikipedia: Minestrone (Italian: minestra (soup) + -one (augmentative suffix), therefore “soup” or “soup with several ingredients” is a very thick Italian soup, composed of a wide variety of cut vegetables and, almost always, rice or pasta.The most used ingredients are: tomatoes, beans, onions, carrots, celery, bacon, chicken broth, meat broth, etc.
There is no specific recipe for minestrone precisely because it is made with whatever vegetables are in season.
Presentations done, I’ll show you how I make my vegetable soup. Okay, a few days ago it was cold here, completely unreasonably (that’s why there was soup) and now it’s desert hot, but it was so good that I’m going to post it anyway:
I start by chopping around 500g of meat (in this case I used muscle, but it can be whatever you want).
In the pressure cooker, I add a drizzle of olive oil and sauté 2 chopped onions (small) and 1 tablespoon of crushed garlic. I add the meat and let it brown.
I sprinkle freshly ground black pepper, along with 3 tablespoons of liquid meat broth (if you don’t have this version, add 1 tablet or 1 envelope of powder), 1 tablespoon of paprika or coloring and 400 ml of boiling water. I cover the pan, after bringing pressure to bear, lower the heat and leave for 20 minutes.
After the pressure releases, add 2 cups of chopped vegetables, whatever I have at home. Suggestions: potatoes, cassava, green zucchini, chayote, carrots, green beans, etc. I add 1 teaspoon of salt, 1.2 liters of boiling water and cover the pan again. After gaining pressure, I lower the heat and leave for 6 minutes.
Taste the seasoning, add more salt if necessary. At this stage I add the pasta. It can be any type, in this case I used angel hair, the one that comes in “nests” (there were 4 nests). I also add fresh peas and let them cook together with the pasta, now under pressure.
“Husbands eat soup“! That’s why he had soup every day (whether cold or hot)! Here at home we like to add grated parmesan at the end. For the lighter version, don’t add macaroni and cheese (it’s great for those on a diet!).
