I was looking for a recipe to use the semi-cured cheese that I bought in Águas de São Pedro and in my search I found this biscuit recipe. I saw several references and with several different proportions of ingredients, so I ended up doing it my way and with what I had at home.

Ingredients:
200g sweet or sour cassava starch (I used sour cassava starch)
120g semi-hard cheese (or parmesan)
1 large egg or 2 small ones
2 tablespoons butter or margarine
salt if necessary.

I mixed the cheese, tapioca starch and butter, it was like crumbs, then I added the egg. As it was a large egg, it was enough to turn into a dough that could be shaped.
If your dough is dry, add another egg. If it becomes soft, add more tapioca starch. Don’t worry, from what I’ve read, this recipe has several proportions and it always works. At the end you take a little bit of dough and taste it, if you think it needs salt, add it.
I try raw dough #SouDessas, now if you feel disgusted then it gets complicated hehehehe.

Make the cookies in the shape you want and bake in a preheated oven at 180ºC for approximately 25 minutes.

This cookie is also known as Chipa in some regions of Brazil. It’s like cheese bread, but tougher. I love eating with brewed coffee!!! Try it!
