I already gave a very similar recipe here on the blog, but I thought it would be interesting to share it again because this time I used oats to bind the meat. Oats make it more nutritious without interfering with the flavor.
I served it with simple mashed potatoes and fresh peas, which I love (feeling like a typical American, you see!).
To start, make a marinade using:
- 2 tablespoons of soy sauce
- 2 tablespoons of oats
- 3 tablespoons of water
- 1 tablespoon of olive oil
- 1/2 teaspoon of salt
- 1 teaspoon of mustard
- 2 cloves of garlic, chopped
- 1/2 grated onion
Let it rest for 10 minutes to hydrate the oats.

Then, add 500g of ground meat to this mixture (it can be duck, beef, or the meat of your choice) and a little chopped parsley. Mix well. The ideal is to use your hands to knead and bind. The result will be this:

To assemble, stretch a piece of plastic wrap over the sink stone or countertop. On top of it, place the meat, and with your hands, shape it into a rectangle.
Add the filling. (I used provolone cheese sticks on this occasion, but you can use whatever you want).

With the help of the plastic, roll it up and press it well, being careful not to roll the plastic together with the meat.

When you finish rolling, press the ends well to prevent the filling from escaping. Place in a pan greased with olive oil, lined with baking paper and with more olive oil on top. This is the best option to avoid sticking.
You can bake it on aluminum foil too, but it must be greased with a lot of olive oil on top (between the aluminum and the meat). Or, directly into a well-greased glass dish as well.

Bake in a medium oven until the surface is golden. I know you’re going to ask how long to bake, but guys, it really depends on the brand of your stove. Just to give an example, I had a stove from another brand before, the same cake, baking at the same 200º on that stove took 1 hour and 10 and on this new one it took 40 minutes. So oven time is a piece of information! You can open the oven and check after 15 minutes, if it looks baked, it’s done! What “genius” information hahaha!

There’s a recipe for you to make a killer puree –> here. I soaked fresh frozen peas (I always have 1 package in the freezer) in boiling water (soaked for 1 minute) and seasoned with olive oil and salt.
This recipe serves 4 people well.
