
This dessert, in addition to being delicious and refreshing, has
very few calories and is very easy to prepare. I made it at the request of a magazine in Campinas that will publish it in a Christmas edition. The theme was a light supper and I thought this dessert was very appropriate.
Blend in a blender:
2 large chopped mangoes;
1 glass of low-fat natural yogurt;
½ small box of light cream;
1 teaspoon of ginger powder;
8 mint leaves;
5 tablespoons of powdered sweetener for culinary use (or
same amount of sugar).
Then prepare ½ packet of unflavored gelatin
according to the instructions on the packaging. Add to the mixture and beat again.
Pour into glasses or a single container and refrigerate.
for at least 2 hours. When serving, garnish with whipped cream and a leaf
of mint. There are spray versions of light whipped cream at most large
supermarkets.
This recipe makes 750ml of flan.
