Light Passion Fruit Pie

Next month I’m going to take a few days to rest on the beach, so I’m taking it very easy so as not to be confused with an orca in the sea (if they mistake me for a sea lion it’s worth it hahaha). Then I took the recipe for powdered milk mousse and turned it into this little tart.

Don’t create the illusion that it’s better than a traditional passion fruit pie because it isn’t. Everything that makes you fat is better and don’t even try to convince me otherwise, but anyway, it’s very light and really deceives the desire to eat sweets.

Sorry for the photos, I’m using the old machine because my memory card broke down and I didn’t have time to buy another one.

This recipe is for a small pie, great for 2 or up to 4 people. The shape is 21 cm.For mass I processed (you can use a blender) 1/2 package of chocolate biscuits without filling, added 2 tablespoons of butter and made moist crumbs. I lined the bottom of the pan and put it in the oven at 200º for 10 minutes.

With the dough already cold, I made the mousse. I used a mixer, but it can be used in “liqui” too. I blended 1 cup (200ml) of skimmed milk powder with 2/3 cup of water at room temperature and 1/3 of a packet of passion fruit juice powder (I used one that is unsweetened).

While beating, I added the rest of the juice little by little until it hardened. In total I used 2/3 of the juice packet. It seems like it won’t work but it does. Don’t stop beating until it hardens. Stays like this:


Next, using a wire whisk, I mixed 1 pot of Greek yogurt (100g) and placed it over the dough. I took it to freeze overnight. It’s important to leave this time.

When serving, I decorated it with light whipped cream that I got from the Hulalá brand –> this one. I will say that it was a great addition to the desire to eat sweets!
