This pudding is light because it does not contain condensed milk, it contains powdered milk. And I can guarantee that it looks spectacular! Instead of sugar, I used powdered sweetener for the oven and stove. Only to make the syrup I used refined sugar. Many people recommend fructose, but it is an expensive sweetener and in terms of calories it is practically the same as sugar.

Set aside the mold with the caramel spread in the center and sides.

Now blend in the blender:

  • 350 ml orange juice (about 6 to 8 oranges)
  • Zest of the peel of 1 orange (optional);
  • 1 tablespoon of vanilla essence;
  • 3 eggs
  • 14 spoons of powdered milk (can be skimmed);
  • 1 cup (180 ml) of sugar or powdered sweetener for culinary use.

Beat for 2 minutes and pour over the caramelized syrup. Bake in a bain-marie, with the oven heated to 200º.

***How ​​I make the bain-marie: Before starting the recipe I put 2 liters of water to boil in a large mug, turn on the oven at 200º to preheat. I place the pudding mold (already caramelized and with liquid pudding) inside another larger, round mold and pour the water that boiled inside so that the pudding has about 3 fingers of water around it. I leave a little more water boiling on the stove and every 20 minutes I open the oven and add a little more (as it evaporates).

The oven time will depend on several factors: size of your pan, brand of your oven, etc. So the ideal is to open the oven from time to time and check (it can take from 30 minutes to 1 hour and 30 minutes depending on your oven). If the pudding is firm, it’s done. Remove from the oven, let it cool slightly and refrigerate for at least 1 hour. Run a knife through the center and sides and unmold.

The orange zest leaves this “sandy” appearance on the surface, if you want it smoother, don’t use the zest. It is fragrant and delicious!!!
