As promised, today the “Light Monday” series begins (how long it will last, no one knows hahaha). Today I bring you an option to get away from the “steak or grilled chicken”. It’s tasty and very light. The recipe yields 10 servings of 130 calories each (but I’m really a nutritionist lately! hahahaha). Let’s see how it’s done?
Ingredients:
500g of ground duckling (use duckling, which is lean meat);
1/2 onion;
1 clove of garlic;
3 tablespoons of olive oil;
1 tablespoon of mustard;
2 tablespoons of soy sauce;
1 tablespoon (flat) of salt;
1 handful of parsley (I didn’t use it because I had run out);
Black pepper (I used freshly ground).
Place all the ingredients (except the meat, of course!) in the processor or mixer (I don’t know if you can use a blender because the quantity is small) or chop as small as possible and mix. Add to the meat and knead well. Let it rest in the fridge for at least 2 hours.
Open the meat on a sheet of aluminum foil in a rectangle shape. You can get creative with the filling, in this case I used what I had in the fridge (you know those leftovers?), then, I had a tomato salad with corn for which I already gave the recipe here, so I used a saucer of grated light mozzarella (Tirolez brand ), and some olives. With the help of the aluminum foil you roll it up, it’s easy, because the meat is left with a lot of binding.
At the end you close the ends, pressing the meat at both ends so the filling doesn’t leak out. Place in a baking dish (if it’s non-stick, you don’t need to grease it, if it’s not, add a little olive oil). Bake in the oven at 200º for 15 minutes covered with aluminum foil. Remove the aluminum foil and leave for another 15 minutes, until golden and the water has dried (Keep an eye out because each oven is different, you know?).
You can trust the amount of calories because I added them up exactly! Have a good light week for you!!!
