This recipe was sent by the reader to Miriam at the time we had the Panela do Leitor column. According to what she wrote in the email, her daughter saw a easy dessert with pineapple, but asked her to make a lemon version and that’s how this recipe came about. At the time I posted the recipe and photo, but these days I decided to try it and I loved the result.
She called the recipe “lemon ice cream” but I took the liberty of calling mine Lemon Flan because I thought the consistency was like a Flan. It’s delicious people!!!
Ingredients:
1 cup (240 ml) boiling water;
1 box of coconut-flavored Maria-mole powder;
1 can of condensed milk (395 grams);
1 can of whey-free cream;
1/2 cup (tea) lemon juice;
Zest of lemon peel to decorate.
Way of doing:
Mix the maria-mole with the boiling water and beat with a mixer or blender for 1 minute. Add all the other ingredients, except the grated lemon peel, and beat well (I beat for 3 minutes).
Grease a mold with a hole in the middle, with as little soy oil as possible (I use a paper towel to absorb it well. Pour the mixture and refrigerate until it is very firm. Unmold and place the zest of the lemon peel on top. Good news: it’s easy to unmold, woohoo!!! I only had to remove it from the mold with the help of a blunt knife.
That dessertin addition to easy to do, it is very smooth and very tasty! I loved it so much!!!
