Papelote, or in French papillote, is a preparation method that involves wrapping the food in aluminum foil (or baking paper), sealing it well and putting it in the oven. The steam that is trapped in the paper cooks the food, and as no water is used, the flavor is very concentrated.

Preparing vegetables in paper is quick and very easy. I used potatoes, carrots and green beans. It is important to use vegetables that take the same time to cook, otherwise some will become very soft and others will be hard.

Simply open a sheet of aluminum foil, drizzle with olive oil, add chopped vegetables (raw), herbs of your choice, salt and freshly ground pepper, close the aluminum foil (it is important to seal the paper well to prevent steam from escaping) and take in the oven at 200º. Mine stayed for 30 minutes, but if when you open the foil the vegetables aren’t very soft, just put them back in the oven.
