King’s Cake

Sweet cakes and pies

Today is the day to follow tradition and eat Bolo e Reis. In Brazil, Three Kings Day is not widely celebrated. Some Catholics usually celebrate the life of the baby Jesus and the three wise men on January 6th, but regardless of religion or tradition, this cake is delicious and worth making and trying!

Ingredients:
1 cup of milk (tea)
1/2 cup (tea) orange juice
1/2 cup (tea) of oil
3 eggs
2 cups of sugar (tea)
3 cups (tea) of wheat flour
1 tablespoon of chemical baking powder
1/2 cup of candied fruit
1/2 cup chopped walnuts
1/2 cup black raisins
1/2 cup chopped cherry
Margarine and wheat flour for greasing
Cherries, walnuts and mint leaves to decorate.

Roof:
1 and 1/2 cup (tea) icing sugar
6 tablespoons of water.

Beat the milk, orange juice, oil, eggs and sugar in a blender until smooth. Pour into a bowl, add the flour, yeast, candied fruits, nuts, raisins and cherries and mix with a spoon.

Pour into a greased and floured 24cm hole in the middle and bake in a preheated medium oven for 35 minutes or until golden.

Remove, let cool and unmold. For the topping, mix the sugar and water until dissolved, add more water if necessary. Spread over the cake and decorate with cherries, nuts and mint leaves.
