During your first cook session, You could add a spritz every hour to help slow down the cooking a little. I use apple cider vinegar or broth.
I'd aim for a lower final temp. 204 seems a little high, you wanna aim for about 180 on the point. Another person said spritz with some juice, I agree. I use apple juice but if you do that try and find a low sugar kind bc you don't want that sugar to burn.
