Ingredients

  • 1 liter of whole milk (type A);
  • 2 tablespoons of lemon broth (1 unit);
  • 25 g butter at room temperature (about 1 ½ tablespoons).

Way of doing

To start making this delicious cream cheese, you will need to place the milk in a medium saucepan and place over high heat. As soon as the milk boils, turn off the heat and keep it aside in a cup.

Now add the milk to the lemon broth and mix gently. Let the lemon acid act for 5 minutes, until curdling. If it takes too long, turn the heat back on and let it boil again. Turn off, stir and wait a few more minutes until it curdles.

Line a sieve with a paper filter and place over a deep bowl. Pour the curdled milk there and, with a spoon, press the mixture to extract as much whey as possible.

Transfer the drained cheese to the blender, add the ½ cup (tea) of reserved warm milk, the butter and salt. Beat well until it forms a smooth cream. Transfer the curd to a glass jar and let it cool completely before covering it. Place in the fridge for at least 2 hours to finish firming up.
