O cornmeal cake is one of my favorites, as it is very simple and easyyou don’t even need a blender or a mixer. So just mix everything together. Thus, the ingredients are:

  • 3 eggs;
  • 2/3 cups of oil;
  • 1 cups of milk;
  • 2 cups of cornmeal;
  • 1 cup of wheat flour;
  • 1 and 1/2 cup of sugar;
  • 1 tablespoon of chemical baking powder.

Preparation mode

First I mix the eggs, oil and milk. In another container, sift the flour, cornmeal and sugar (by sifting they mix better).

Then I add the dry ingredients little by little into the liquids and mix with the whisk. Lastly, I add the yeast and finish incorporating everything.

If you want, you can blend everything in the blender, leaving the yeast for last, because if it blends too much it loses its fermentation capacity.

Preheat the oven to 180ºC for 10 minutes. Place in a greased and floured pan and bake. In my oven it took 35 minutes, but this time can vary greatly depending on the brand of oven.

So, do the toothpick test. Just place a toothpick in the center of the cake, if it comes out clean it is baked. If you want, you can add little pieces of guava paste and/or fennel, but it’s pure, with butter it’s really good!
