Great tip for a healthy and light snack. The original recipe is from the book 500 Cookies which publisher Marco Zero sent me (I loved it!), however I made some adaptations, mainly in the quantities, because this cookie has to be consumed within 24 hours and it would be impossible to eat a large batch of them alone. So the recipe I’m going to present here makes 10 small cookies. If you want a larger quantity, just double the ingredients. Look what an easy recipe:

Ingredients:

  • 1 medium dwarf (or water) banana;
  • 2 dried dates (or prunes);
  • 5 tablespoons of rolled oats;
  • 1 level spoon of soybean, canola, or oil of your choice;
  • 5 drops of vanilla essence;
  • 1 teaspoon of honey. Honey is optional, I used it because I really like it, there was no such ingredient in the book. You can also add 1 teaspoon of powdered culinary sweetener, or the same amount of sugar (brown sugar can also be used). I think it tastes sweeter, but for those who don’t like very sweet foods, the sugar in the banana is enough.

Preheat the oven to 200°.

Mash the banana and dates (or plums) well. I crushed them with a fork because my dates were soft, but if yours aren’t, because I’ve seen some that are drier, soak them in hot water for 15 minutes. If you can’t find dates, you can use plums.

With the fruit puree ready, add the oats, oil and honey.

Using two small spoons, make balls and place on a greased baking tray. I didn’t grease it because I used a silicone mat. The dough is really soft, it is not ready to roll with your hands, it is ready to “drip” onto the baking sheet forming a firm mound.

Bake for 15 to 20 minutes. As ovens are very different depending on the brand, I suggest that after 15 minutes you check if the cookies are already golden underneath. Mine lasted 18 minutes. But in the book it said 20.


Important: I believe you can make it with just banana (without dates or plums), but I haven’t tested it. These cookies are not crunchy, but they are very tasty and because they contain a lot of fiber, they help to stave off hunger. Good choice for the light crowd!

Obs.: The silicone mat is called Silpat, I don’t know how I lived without it for so long! It doesn’t stick to ANYTHING, it doesn’t smell, and it lasts a long time. There are Brazilian stores that sell it but the price is salty. I bought it on Ebay, much cheaper, but it took almost 3 months to arrive. Look here.
