Do you know when we put a little chicken and a sausage on the grill to “start the work”? So, at the beginning of the barbecue you put some onions (preferably small) with their skins on the grill and forget about them… Leave them there until the skins are very black, even burnt. Then just peel it, cut it into petals and season it with salt, pepper, vinegar, olive oil and oregano. Think mild and sweet onion!
